Sweet cranberries, tart hibiscus and warm spices elevate these simple baked apples. A perfect dessert for the holiday season.
• 4 medium apples (Fuji, Gala or Honeycrisp)
• 1/4 cup dark brown sugar
• 1/4 cup old-fashioned rolled oats
• 6 tea bags Cranberry Spice Hibiscus, divided
• handful of dried cranberries, chopped
• handful of toasted walnuts, chopped
• dash of salt
• 1 tablespoon butter, divided
• 1 cup hot water
How to Make
Preheat oven to 375°F.
Core the apples, creating a small well in the center and leaving the bottom of the apples intact. This can be done with a paring knife, melon ball or serrated spoon.
Open two tea bags and mix with brown sugar, rolled oats, salt, cranberries and walnuts in a small bowl. Divide this mixture between the apples and pack firmly. Arrange the apples in a baking dish and top each one with butter.
Meanwhile, steep the remaining four tea bags in a cup of hot water for five minutes. Remove tea bags and pour the hot tea into the bottom of the dish and cover loosely with aluminum foil.
Bake for 20 minutes and remove foil. Continue baking uncovered until the apples are soft for an additional 30 minutes. The skin on the apples will wrinkle once baking has finished.
Serve warm with a scoop of ice cream or whipped cream and pour the remaining tea over the apples. Any leftovers can be eaten for breakfast the next day with some Greek yogurt.
