U-Matcha Butter Cookies

Makes 3 dozen cookies

  • 5 packets The Republic of Tea U-Matcha Single Sips (approx. 17.5 grams)
  • 2 cups unbleached, all-purpose flour
  • 3/4 cup softened butter, unsalted
  • 1 cup powdered sugar
  • 1 pinch kosher salt
  • 2 egg yolks
  • 1/2 cup milk chocolate chips

Step 1:

Preheat oven to 325-degrees Fahrenheit. Beat butter until smooth and creamy. Add salt and continue to beat. Reduce mixer speed and add powdered sugar and blend until mixture is light and fluffy. Add egg yolks and mix until combined.

Step 2:

In a separate bowl, combine U-Matcha and flour. Gradually add U-Matcha and flour mixture to wet ingredients and mix until combined. Add chocolate chips and mix until the dough is smooth.

Step 3:

Cut the dough into 4 portions and form each portion into smooth cylinders. Wrap each cylinder with plastic wrap and refrigerate at least 2 hours (best overnight). Once refrigerated, remove plastic wrap and slice dough into 1/2 inch thick cookies.

Step 4

Bake on a lined baking sheet for approx. 15 minutes, until bottoms are lightly browned. Allow cookies to fully cool on a wire rack.
